That phrase has come up on several occasions in my marriage, all to quote my husband’s mother who used to say that as a joke when they were low on food at the house. At least, I THINK it was a joke. It is now, of course. In our case, this is truly a joke since I am still adapting to buying for only two people instead of the four we used to have in the house. We just did our monthly buying at the store over 50 miles away. I usually plan to buy in bulk when we go there. I did. Bulk. At the latest count, we have 11 dozen eggs for two people. I suspect that we can have LOTS of things with eggs in them.

One thing that my husband brought up to me today is that not everyone is able to do hard boiled eggs without having loads of trouble peeling them. I hate it when the things peel off some of the egg too. That means that it was not cooked like it should have been. Oh, the egg is cooked but if it were done another way, the shell would peel off so nicely that you would have little to no trouble at all.

For that, you have a pot with cold water straight from the faucet, not hot water. Put in the number of eggs you want to boil. Add a pinch of salt. Put them on a medium heat until the water starts to boil. Give it about a minute then take the pot off the heat, cover and wait about 10 minutes. You should have eggs that peel easily.

I have heard that people cannot microwave eggs. Yes you can. I don’t know about fried eggs which are bad for you anyway but I do know that you can microwave scrambled eggs. Scramble them in a bowl, adding milk to suit your taste. I add a little for richness and volume. Depending on your microwave, because they are all different, put them in for one minute intervals stirring before starting the time again. When the middle is firm, they’re done.

For a little variety, which will add some time but is still good, I add different ingredients. It can be mushrooms, onion, green peppers, a bit of garlic, spinach or any old thing you can think of. Now, I do like to saute all of those ingredients I mentioned just to have them softer but that’s just me. You do not have to do that if you don’t want it that way. But it tastes great. And don’t forget the cheese. We have found that we like Monterey Jack, Mozzarella and Cheddar the best but it doesn’t matter. Just pick one you like and put it in or on your scrambled eggs from the microwave.

In the meanwhile, I think I’ll go get a pot of water and eggs on to boil. I’ll bet we could have hard boiled eggs for quite a while.

    Unh…yes, you do have eggs, or should i make that EGGS. How many ways is it possible to fix eggs? I do know that you can’t freeze the boiled aggs, it makes them rubbery. I will be praying for your inspiration in the handling of the eggs. How about a picnic and lots of deviled eggs? :)
