This is a very basic slow cooker recipe that will help give your tailgate party a great main dish. Or it could be something you use for sitting in front of that big screen television. Whatever it’s used for, it will be a nice addition to your menu. Most of this is a standard recipe but with a few additions of mine and other people’s that just makes it all the better.
For your slow cooker, you will need: 2 lbs of ground meat (beef or turkey will work equally well), 1 large onion chopped, one large green pepper chopped, 2 cans of stewed tomatoes (diced tomatoes work too. They just won’t have the extra ingredients), 2 large cans of vegetable juice (some folks like the HOT variety but if someone cannot have the spices, this works great), 4 cans of beans (pinto or kidney), 2 tbsp. of chili powder, 1 tsp. salt and garlic (which will be to taste. We use about a clove or so of fresh. If you have the shaker kind, just shake it all out till you get the amount you want. I did that for years). An optional addition is a half tsp. of cayenne pepper for those who love hot.
Brown your ground meat in a skillet adding in the chopped onion and green pepper so that it blends with the meat. Put that mixture into the slow cooker, then adding the rest of the ingredients. Slow cook on low for 4-5 hours. You can garnish with things like cheddar cheese (highly recommended!!), green onions finely chopped, sour cream or chopped ripe olives. If this is an at the house football game, just set the garnishes out in separate bowls for each person to do their own. This is a major hit with chili lovers. And it feeds a crowd!! Enjoy your game!
